Perwolff

From careful selections of the best Blaufränkisch grapes of a vintage. Aged in small oak barrels together with a small portion of Cabernet Sauvignon. This most meticulously processed and extremely long-lived luxury wine of international fame takes its name from an old word for Deutsch-Schützen. The settlement was, in fact, mentioned for the first time in 1221 under the name of Perwolff. Problem: Due to its small quantities, it is mostly sold out at the winery. Therefore, please try it at one of the indicated merchants.

VARIETAL: Blaufränkisch (93%), Cabernet Sauvignon (7%)
SITE / SOIL: Plateau, southeast to southwest / mineral, ferruginous loam and slate
AGE OF VINES: Blaufränkisch: 29 – 46 years, Cabernet Sauvignon: 22 years
FERMENTATION: without cultured yeasts in traditional open fermenters, pressing after 18 – 22 days, malolactic fermentation in barriques
AGING: 18 months in barriques
ANALYSIS: 14 % vol. alcohol; 5.5g/l acidity; 1.4 g/l residual sugar
BEST TO DRINK / DRINKING TEMPERATURE: 2010 – 2017/ 18º C (64°F)
RECOMMENDED FOOD PAIRINGS: dark meet, venison, intense and spicy sauces
