SITE/SOIL: Southeast to south / minerally loam and slate
AGE OF VINES: 12 – 28 years
FERMENTATION: Without cultured yeasts in closed fermenters, pressing after 8 – 12 days, malolactic fermentation in stainless steel tanks
AGING:6 months in large oak casks
ANALYSIS: 13.0% vol. alcohol; 5.1 g/l acidity; 1.5 g/l residual sugar alcohol
BEST TO DRINK / DRINKING TEMPERATURE: Now – 2011/ 14-16°C
RECOMMENDED FOOD PAIRINGS: Pasta, poultry, venison
